Zero-Proof Ginger Mule

What you need

  • 1/2 medium cucumber (about 4 to 6 thin slices, plus 1 slice for garnish)
  • 1/2 cup ice (bullet or nugget), plus more to fill the glass
  • 1 1/2 tablespoons fresh lime juice (from 1 lime)
  • 1 teaspoon simple syrup (optional, to taste)
  • 6 to 8 ounces ginger beer, well chilled
  • 2 to 3 dashes aromatic bitters (optional)
  • Lime wheel, for garnish
  • Pinch of flaky salt (optional, to sharpen flavor)

Method

  1. Chill the glass (optional but helpful): Fill a copper mug or tall glass with ice and a splash of water while you prep, then dump it out right before building the drink.
  2. Add cucumber: Put 4 to 6 cucumber slices in the glass. If you like more cucumber flavor, gently press them once or twice with a spoon to release a little juice (do not fully muddle into pulp).
  3. Add lime and sweetness: Pour in the lime juice. Add simple syrup if your ginger beer is very spicy or you want a sweeter mule.
  4. Fill with ice: Fill the glass all the way to the top with fresh ice. More ice keeps the drink colder and slows dilution because the drink chills faster.
  5. Top with ginger beer: Pour in 6 to 8 ounces of well chilled ginger beer. Stir once or twice from the bottom to mix without knocking out too much carbonation.

Choose a ginger beer
