What you need

  • 1 15-ounce can chickpeas, drained and rinsed
  • 1/3 cup tahini
  • 3 tablespoons fresh lemon juice
  • 1 small garlic clove, finely grated
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon kosher salt
  • 3 to 5 tablespoons ice water
  • 1 tablespoon extra-virgin olive oil, plus more for serving

Method

  1. Simmer the rinsed chickpeas in water for 5 minutes, then drain and cool until warm.
  2. Process the tahini, lemon juice, garlic, cumin, and salt for 45 seconds. Scrape the bowl.
  3. Add the warm chickpeas and process until finely pureed. With the machine running, stream in 3 tablespoons ice water and the olive oil.
  4. Continue processing until smooth, adding more ice water one tablespoon at a time. Taste, season, and serve.
