Natural vs. Quick Pressure Release

Choose a release method by recipe, food behavior, valve design, and the risk of hot liquid or foam escaping with steam.

Natural release waits for pressure to fall

Stop or finish the cook cycle and leave the pressure system in its instructed sealing state while temperature and pressure fall naturally. The food continues to cook during this period.

The float or pressure indicator must drop before the lid can be opened.

Quick release vents steam

The model's release control opens a path for a forceful jet of hot steam. Keep face, hands, cabinets, and objects away from the outlet and use only the approved control method.

Never cover the valve with a towel and never force the lid.

Some foods need extra caution

Instant Pot advises against quick release for fatty, oily, thick, high-starch, or expanding foods such as stews, chili, pasta, congee, beans, and grains.

Follow the recipe's natural or staged release and wait longer if liquid spits or foam approaches the valve.

Confirm zero pressure

A quiet cooker may still be pressurized. Check the model's float valve or on-screen indicator and verify that the lid turns without force only after all pressure is released.
