Slow Cooker Low, High, and Warm Settings Explained

Use cooking settings and keep-warm mode without treating them as interchangeable temperatures or universal recipe conversions.

Low and high change the path

High brings the food through the heating cycle sooner, while low spreads cooking over more hours. A recipe should provide a tested time for the selected setting.

Do not invent a universal one-to-one conversion when food size, liquid, vessel loading, and appliance behavior differ.

Warm is for cooked food

Keep-warm mode is designed to hold already cooked food for serving. USDA guidance calls for hot holding at 140 degrees Fahrenheit or warmer.

Do not begin raw meat or poultry on warm, and do not use warm to reheat cold leftovers.

Keep the lid in place

Opening the lid releases accumulated heat and steam and can lengthen slow cooking. Remove it only when a recipe requires stirring, adding an ingredient, or checking doneness.

Use a thermometer near the end rather than repeatedly lifting the lid early.

Respond to a power outage

If you were away during a power failure, USDA says to discard the food even if it looks done. If you are home, finish cooking immediately by another safe method.

A programmable display returning does not prove the food stayed at a safe temperature.
