What you need

  • 1 1/2 cups steel-cut oats
  • 6 cups water
  • 2 apples, peeled and diced
  • 1 teaspoon ground cinnamon

  • 1 teaspoon vanilla extract
  • Milk, nuts, or fruit for serving

Method

  1. Lightly grease the crock if the manual permits, then add the oats, water, apples, cinnamon, and salt.
  2. Cover and cook on low for 6 to 7 hours until creamy, keeping the lid closed.
  3. Stir in the maple syrup and vanilla. Adjust consistency with hot water or milk.
  4. Serve promptly with preferred toppings and cool leftovers in shallow containers.

Prevent scorched edges

Use the stated water ratio and a cooker size that keeps the oat layer reasonably deep. A very large crock can overcook a small batch at the edges.

Do not substitute quick or rolled oats at the same time and liquid.

A programmable cook duration is useful; a delayed start that holds perishable dairy at room temperature is not.
