What you need

  • 3 pounds Yukon Gold potatoes, peeled and cut evenly
  • 1 tablespoon kosher salt, plus more to taste
  • 6 tablespoons unsalted butter
  • 3/4 cup whole milk or half-and-half, warmed
  • 1/4 teaspoon black pepper

Method

  1. Cover the potatoes with cold salted water, bring to a simmer, and cook until completely tender, 18 to 22 minutes.
  2. Drain well and return to the hot pot for 1 minute to release surface moisture. Transfer to the mixer bowl while hot.
  3. Fit the flat beater and mix on the lowest speed just until broken down. Add the butter, then stream in warm milk only until creamy.
  4. Stop immediately, season with salt and pepper, and finish folding by hand if needed.
