What you need

  • 1 1/2 pounds Roma tomatoes
  • 1 jalapeno or serrano pepper
  • 1/2 white onion, cut into wedges
  • 2 unpeeled garlic cloves
  • 1/3 cup cilantro
  • 1 tablespoon fresh lime juice
  • 3/4 teaspoon salt, plus more to taste

Method

  1. Broil or grill the tomatoes, pepper, onion, and garlic until softened and deeply charred in spots.
  2. Peel the garlic and add it to the blender with the vegetables, cilantro, lime, and salt.
  3. Pulse in short bursts, checking after each one, until the salsa is cohesive but still visibly textured.
  4. Rest for 15 minutes, then adjust salt and lime.

Salsa does not need maximum power. It needs a pulse control that responds quickly enough to chop without trapping the cook in a long preset cycle. The goal is to distribute the chile, onion, and garlic while preserving enough tomato texture to feel freshly made.
