Green goddess dressing

A vivid, herb-packed dressing that lands somewhere between creamy salad dressing, vegetable dip, and a sauce for grilled chicken or fish.

What you need

  • 1/2 cup plain Greek yogurt
  • 1/3 cup mayonnaise
  • 1 cup packed mixed tender herbs, such as parsley, basil, chives, and dill
  • 2 tablespoons lemon juice
  • 1 tablespoon capers
  • 1 small garlic clove
  • 2 tablespoons olive oil
  • Salt and black pepper

Method

  1. Add the yogurt, mayonnaise, lemon juice, capers, garlic, salt, and pepper to a narrow blending cup.
  2. Pack the herbs on top and drizzle in the olive oil.
  3. Blend from the bottom, moving the immersion blender slowly upward as the herbs break down.
  4. Taste and loosen with cold water one teaspoon at a time if you want a pourable dressing.

Why a smaller vessel often works better

A large countertop jar can leave a one-cup recipe below the effective blade path. A narrow immersion cup or compact blending jar keeps the herbs close to the blades, creates a more reliable emulsion, and avoids making a double batch simply to get the machine to work.
