What you need

  • 1 cup whole milk
  • 2 large eggs
  • 3/4 cup all-purpose flour

  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon fine salt
  • 1 cup whole-milk ricotta
  • 1 tablespoon honey
  • 1 teaspoon finely grated lemon zest
  • Blueberries and powdered sugar for serving

Method

  1. Add the milk, eggs, melted butter, sugar, vanilla, and salt to the blender, followed by the flour.
  2. Blend on low for 10 to 15 seconds, just until the batter is smooth. Let it rest for 20 minutes so the flour hydrates and excess bubbles settle.
  3. Stir the ricotta, honey, and lemon zest together in a small bowl while the batter rests.
  4. Heat a lightly buttered nonstick skillet over medium heat. Pour in about 1/4 cup batter and immediately swirl it into a thin layer.
  5. Cook until the edges look dry, flip, and cook briefly on the second side. Fill with lemon ricotta and finish with blueberries and powdered sugar.
