What you need

  • 3 cups bread flour
  • 2 teaspoons instant yeast
  • 1 teaspoon sugar
  • 1 teaspoon kosher salt
  • 1 cup warm water, 100 to 110 degrees F
  • 2 tablespoons olive oil

Method

  1. Fit the blade approved for dough and pulse the flour, yeast, sugar, and salt to combine.
  2. With the machine running, stream in the water and olive oil. Process only until a cohesive dough forms and begins to clear the bowl.
  3. Turn the dough onto a lightly floured counter and knead by hand for 30 seconds, adding flour only if it is very sticky.
  4. Place in an oiled bowl, cover, and let rise until doubled, about 1 hour. Divide, shape, top, and bake using your pizza method.

Food processor lesson

Processor dough can go from shaggy to developed very quickly. Stop at the recipe's cue instead of letting a finished ball circle the bowl.

If the machine rocks, stalls, smells hot, or exceeds its manual's duty cycle, stop and follow its cooling instructions.

Plan ahead

For more flavor, refrigerate the covered dough after a short room-temperature start and use it within two days.

Bring cold dough toward room temperature before shaping so it stretches without snapping back.
