What you need

  • 1 pound boneless skinless chicken breast, sliced into even strips
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small red onion, sliced
  • 1 tablespoon neutral oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon kosher salt
  • 6 small tortillas
  • Lime wedges and cilantro for serving

Method

  1. Preheat the toaster oven to 425 degrees Fahrenheit on bake or convection bake. Place the rack and an approved quarter-sheet pan as the manual directs.
  2. Toss the chicken, peppers, onion, oil, spices, and salt. Spread in one loose layer so the pieces are not piled.
  3. Roast 9 minutes, then turn the food carefully. Continue until the chicken reaches 165 degrees Fahrenheit in the thickest pieces, about 7 to 10 minutes more.
  4. Rest the chicken 3 minutes. Warm the tortillas only in a model-approved way, then serve with lime and cilantro.
